Recipe: Super Simple Mackerel & Potato Salad

Liven up your lunchbox with this super healthy, super simple mackerel and potato salad. Because who really liked lettuce anyway.

You will need (for one generous portion):

1 tin mackerel in olive oil
Handful of baby/new potatoes
1 tomato, quartered and halved
Any leftover salad or vegetables – we used cooked brussel sprouts and cucumber but avocado, broccoli and green beans also work well
Crushed black pepper (lots of it)
Fresh lemon (bottled lemon juice also works fine)

  1. Halve or cut the potatoes into decent-sized chunks.
  2. Empty into a saucepan and cover with boiling water. Simmer until tender and drain.
  3. Flake the mackerel into a bowl, along with all of the oil from the tin.
  4. Add the veg, lemon juice, black pepper and salt. Mix well.
  5. Enjoy!
